*Optional: crumbled bacon, sliced green onion, diced tomatoes
Wash potatoes and bake (or microwave) until done. Let potatoes cool until easy to handle. Cut potatoes in half lengthwise. Scoop potato out of skins and set aside for another use. Put the skins on a baking sheet.
Drizzle a teaspoon or two of Oilerie's Garlic Extra Virgin Olive Oil into each potato skin. Spoon a full tablespoon of Olive Salad (from Oilerie) into each skin and top with shredded cheddar cheese. Sprinkle Curt's Table Spice on top.
Bake at 350 for 15 minutes or until cheese melts. Enjoy with sour cream or on their own!
