Serves 4
8 Slices ciabatta bread, halved lengthwise
2 Tbsp. OILERIE® BASIL OLIVE OIL
8 tsp. OILERIE® PESTO
8 slices fresh mozzarella
1/3 C. OILERIE® STUFFED OLIVES (your choice) chopped
Directions:
PREHEAT grill or fry pan to medium high. Brush grill grates with EVOO, or coat bottom of fry pan with EVOO.
BRUSH uncut side of each bread slice (top/bottom) with EVOO.
SPREAD 1 tsp. pesto on cut side of bread, then top with mozzarella and olives; arrange second slice on top.
GRILL or FRY sandwiches, covered and weighted down with baking sheet and bricks, until toasted on one side, about 2-3 minutes.
FLIP sandwiches over, weight down, and grill until golden and cheese melts, 2 more minutes.
Keep warm and SERVE immediately. Enjoy!
