Dressing:
¼ cup Oilerie® 12-year White Balsamic vinegar
½ cup Oilerie Oregano Extra Virgin Olive Oil (evoo)
1 TBL fresh oregano or 1 teaspoon dried
Salt and Pepper, to taste
Salad:
1 package Oilerie vegetable rotini, cooked according to package instructions and cooled
1 medium tomato, chopped
½ English cucumber, sliced
3 TBL red onion, diced
2 TBL chopped kalamata olives
¼ cup feta cheese, crumbled
1- To make dressing: mix vinegar, oregano, and pepper in a bowl, whisk to combine. Add oregano evoo slowly and whisk.
2- In a bowl, add pasta, tomatoes, cucumber, and red onion. Add dressing and toss just to coat the pasta (you can keep the rest of the dressing in a sealed jar/container for ~2-3 days.) Add the olives and feta cheese and toss lightly. Taste for salt and add if necessary.
