Beets. Cooked and sliced. (you can use pickled beets as well). I use about 5 slices per plate, but they can also be put on a platter.
Red onion, very thinly sliced
Fresh Spinach
Oilerie Extra Virgin Olive Oil (Fior Fiore, Organic, Italian...whatever you like)
Goat cheese, one thick slice per serving
Oilerie's 25-year Aged Balsamic Vinegar
Arrange sliced beets on a plate or platter. Toss onion slices on top. In the middle of the "arrangement", place a portion of the fresh spinach. Drizzle with Oilerie EVOO. On top of the spinach, add the slice of goat cheese. Splash on the balsamic vinegar! This is a beautiful individual salad or it's great on a platter for the whole group to enjoy.
