1 small can Mandarin orange segments-chilled
1 large can Chinese vegetables-chilled
1 small cabbage chopped (about 4 cups)
1/3 cup unsalted sunflower kernels-toasted
1 cup, more or less, chopped onions green, red-whatever
1 (3 oz.) package of Ramen noodles-uncooked and crumbled
1/3 cup Oilerie orange extra virgin olive oil
1/3 cup red wine vinegar
1/4 cup brown sugar
Combine olive oil, vinegar, and brown sugar in medium bowl. Add chopped cabbage, Chinese vegetables, and onions and toss. Within one half hour of serving add chilled Mandarin oranges, crumbled noodles,
and toasted sunflower kernels. Toss again. Use of half or entire
seasoning packet from noodles is optional.
Keeps well in refrigerator. Flavor mellows. Note: Red cabbage will color noodles.
