2 cups cranberries, chopped
1/2 cup sugar
1/2 cup Oilerie Orange evoo or Roasted Walnut oil, or a combination of both
2 small onions, chopped
2 cups celery, chopped
1 teaspoon poultry seasoning
2 teaspoons Curt's Cooking Spice (available at Oilerie.com)
8 cups cubed bread
2 apples, peeled, cored and chopped
4 dates, chopped
1/3 cup walnuts, chopped (optional)
1/4 cup egg substitute (the equivalent of one egg)
In a medium bowl, combine the sugar and cranberries. Set aside. Preheat oven to 325 degrees.
Heat the oil in a Dutch oven over medium heat. Add the onions and celery and cook until tender, 10 minutes. Stir in the prepared cranberries, Curt's Cooking Spice and the poultry seasoning. Add the bread cubes, apples, dates, walnuts, and egg substitute stirring to combine. Place Dutch oven in oven and bake covered for 1 hour. Remove cover and bake for another 30 minutes or until top is browned.
