1 c. Oilerie Vanilla extra virgin olive oil
1 c. sugar
½ c. egg substitute
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. cream of tartar
Pinch of salt
4 c. flour
¾ c. raisons or dried Door County cherries
Pre-heat oven to 375 degrees. In a large bowl cream the Vanilla extra virgin olive oil and the sugar. Add the egg substitute and blend well. Add the vanilla extract and stir to blend. Mix all dry ingredients together in separate bowl and add to the liquid, stir to combine. Add raisons/cherries and combine. Form by the tablespoon into a balls and place on a cookie sheet. Flatten dough lightly with a fork and bake 10 to 12 minutes until golden. Makes several dozen cookies.
Grandma Schroeder made these for my father with lard and eggs. Since his heart attack, my version of grandma's fork cookies are a real treat for my dad and he said that these cookies "Are better than mom's!"
