16 dates, pitted
8 slices applewood smoked bacon, cut in half
1 roasted red bell pepper, seeded and chopped
4 cloves garlic, chopped
2 shallots, chopped
4 teaspoons Oilerie extra virgin olive oil
1 cup of white wine
2 teaspoons of Oilerie 25 year old Balsamic vinegar
1 1/2 cups heavy cream
1/4 lb of unsalted butter
Pinch of cracked black pepper & sea salt
Chopped parsley for garnish
For the dates:
Wrap a piece of bacon around each date
Bake in a 500 degree oven until bacon is done, about 10 minutes
For the sauce:
Saute red pepper with garlic and shallots in olive oil. Add wine and Balsamic and reduce by half, 7 -10 minutes.
Slowly stir in the cream and reduce 2 minutes more. Add butter and stir to melt. Using a stick blender or food processor, whip until creamy, add salt and pepper. Strain and keep warm until ready to use.
To serve:
Spoon some sauce onto a serving plate and arrange dates on top. Garnish with parsley; serve warm.
